Red or White Chili

2 Tbsp olive oil

1/2 onion, chopped

1 cup chopped cabbage

1 poblano or jalapeno pepper, chopped

1/2 tsp cumin

1/2 tsp oregano

1/4 tsp smoked paprika or chili powder

good dash of hot pepper flakes or cayenne

1/2 tsp salt

black pepper

2 cloves garlic, chopped

1 can drained beans

1 can green chilis

1 cup stock or 3 tomatoes, chopped

1 potato, chopped [optional]

1/2 cup frozen or canned corn

1 1/2 cups chopped cooked chicken [optional]


slowly saute onion / cabbage / spices until softening

add garlic for 30 seconds

then add beans / chilis / stock or tomatoes / potato if using

simmer 20 minutes

add corn / chicken if using

simmer another few minutes


I make this either red w/ potato or white w/ chicken
