2 Tbsp olive oil
1/4 yellow onion, chopped
1 carrot, peeled & chopped
1 cup celery, sliced
2 garlic cloves, chopped
1” ginger, peeled & chopped
1 serrano pepper, deseeded & chopped
1/4 tsp turmeric
1/2 tsp cumin seed
1/2 tsp garam masala
1/4 tsp gochugaru
salt / pepper
1 15-oz can tomatoes
1 15-oz can black-eyed peas, drained & rinsed
saute veg in oil for 5 minutes
add spices / tomatoes, saute another 2 minutes
add black-eyed peas, bring to a boil
lower heat, simmer 10 minutes until veg barely tender
serve w/ rice
