Farro Chili

3 Tbsp olive oil

1 medium onion, roughly chopped

1 bell pepper, chopped

1 tsp salt & lots of ground pepper

1/2 cup farro

2 garlic cloves, chopped

1 jalapeno, chopped

1 1/2 tsp cumin

1 1/2 tsp chili powder

1/2 tsp coriander

1/2 tsp smoked paprika

1 15-oz can tomatoes

1 15-oz can black beans

1 1/2 cup water

1 Tbsp apple cider vinegar


saute onion / bell pepper in olive oil for 5 minutes until softened

add farro / garlic / jalapeno / spices

saute another minute

add tomatoes / beans with some of their liquid / water

simmer for 25 minutes

off heat add vinegar
