2 Tbsp olive oil
1/2 yellow onion, quartered & sliced
1 celery stalk, sliced
2 carrots, sliced
1 large or 2-3 small mushrooms, sliced
3 garlic cloves, halved & sliced
1/2 tsp cumin seed
1/4 tsp mustard seed
1/2 tsp ground ginger
1/2 tsp coriander
1/4 tsp cardamom
1/4 tsp turmeric
1 heaping tsp garam masala
good shake of harissa powder
salt / pepper
1/4 brick firm tofu, cut in to 1/4" cubes
1/2 cup moong dal
1 15-oz can tomatoes
1 15-oz can vegetable broth
saute veg & seasonings & tofu in oil on medium heat for 5 minutes
add dal / tomatoes / water / bouillon
simmer for 40 minutes until dal is tender
serve with cooked grain, e.g., rice / millet / farro
