Mushrooms & Green Beans & Polenta

1 cup polenta

4 cups water

1 tsp salt

2 Tbsp butter

1/2 cup grated Parmesan

3 Tbsp olive oil

1 lb green beans, halved

1 lb mushrooms, thickly sliced

1 tsp thyme

3 garlic cloves, minced

2 Tbsp soy sauce

2 tsp chili crisp


soak polenta in water for at least an hour

add salt, bring to a boil, simmer, stir often, until cooked, about 20 min

stir in butter, pour polenta into a shallow bowl, grate cheese over it


in a large frypan or wok, heat oil over medium heat

add mushrooms, beans, thyme, salt, & pepper

saute for 8-10 minutes until mushrooms are dark & beans still crisp

stir about once a minute

add garlic toward the end

off heat, stir in soy sauce & chili crisp, pour over the polenta
