Leek & Mushroom Shepherd's Pie

1 Tbsp butter

1 Tbsp olive oil

1/2 cup diced onion

1/2 tsp dried thyme

1 leek, halved & cut into 1/2” slices

8 oz mushrooms, quartered

ground nutmeg

salt / pepper

2 tsp miso

1/2 cup full-fat plain yogurt


6-8 oz potatoes, cut into 1/2” chunks

1 Tbsp butter

1/3 cup cottage cheese

salt / pepper

panko


saute onion in butter & olive oil on medium heat for 5 minutes

add thyme & leek, saute another 3 minutes until leek slices separate

add mushrooms, a generous shake of nutmeg, & salt / pepper

saute 5-8 minutes until mushrooms are browning nicely

off heat, add miso & yogurt, stir well

back on low heat until mixture simmers

pour into a pie pan


boil potatoes until ready to mash

mash with butter / cottage cheese / salt / pepper

spread on top of leek / mushroom mixture in pie pan

sprinkle panko generously on top


bake 30 minutes @ 350° until panko browns
