Green Bean & Potato Sabzi

2 Tbsp olive oil

1/2 medium onion, chopped large

1 large or 6-7 very small potatoes, cut into 1/2” cubes

8 oz. green beans

3 garlic cloves, chopped

1” ginger, chopped

1 tsp salt

1/2 tsp cumin

1/2 tsp coriander

2 Tbsp tahini [or nut butter]

juice from 1/2 lemon


soften onion in olive oil for a few minutes over medium heat

raise heat & add potatoes plus 1/2 tsp salt & plenty of black pepper

cook, tossing, 3-4 minutes until potatoes are golden brown

lower heat back to medium

add beans & 1/2 tsp salt & 1/4 cup water

cover & cook for 3-4 minutes

add spices, ginger, & garlic

cook, tossing, until you’re happy with potato & green bean doneness

stir in tahini, cook a minute to distribute well

off heat, add lemon juice
