Chard Pie

2 eggs

1/3 cup cottage cheese

1/3 cup full-fat plain yogurt

1 Tbsp flour

salt / pepper


2 Tbsp olive oil

1 leek, halved & sliced

1 cup frozen corn

1 garlic clove, minced

salt / pepper

1/2 bunch chard, leaves only, coarsely chopped


grana padano [or parmesan] cheese


mix together eggs / cottage cheese / yogurt / flour / salt / pepper


in a large skillet, saute leeks in oil until browning

add corn / garlic / salt / pepper

saute 2 more minutes

add chard, cook, stirring, until corn is warm, chard is wilted


pour veg into pie pan

top with egg / dairy mixture

grate grana padano cheese on all


bake 35 minutes in a 350° oven
