Red Cabbage Soup

2 Tbsp oil

1/2 red onion

3 stalks celery

1 tsp fennel seed

3 garlic cloves

1 small red cabbage

1 can diced tomatoes

1 can black beans

1/2 cup brown rice

2 cups broth

1 cup water

1 tsp thyme

1 tsp basil

salt & pepper


cook chopped onion / celery in oil until softening

add garlic for another minute

add chopped cabbage

stir & cook for a couple minutes

add everything else

cook slowly for 45 minutes or until brown rice is done
