Kale Stew

2 Tbsp oil

1/2 large onion

1/2 sweet yellow pepper

1/2 sweet red pepper

1 stalk celery

generous sprinkling of shawarma spice

1/2 tsp fennel seed

1/2 tsp gochujaro

salt & pepper

3 cloves chopped garlic

1 cup chopped tomato

1 bunch kale

1 can pinto beans


cut vegetables into 1-inch long thick slices

sweat veg plus seasonings in oil for 5 minutes

strip the stems off the kale & chop coarsely

add the rest of the ingredients to the pot

bring to a boil, then cover & simmer for 20 minutes


let sit for at least a few hours before eating
