Green Bean & Potato Sabzi

2 Tbsp olive oil

1 large or 6-7 very small potatoes, cut into 1/2” cubes

salt

8 oz. green beans

salt / pepper

1/2 tsp cumin

1/2 tsp coriander

3 garlic cloves, chopped

1” ginger, chopped

1/2 cup sliced almonds & halved hazelnuts



heat olive oil, medium high heat

add potatoes plus salt / pepper

cook 3 minutes basically untouched until potatoes are golden brown

lower heat back one notch

add beans & salt & 1/3 cup water

cover & cook for 3-4 minutes

add spices / ginger / garlic / nuts

cook, tossing, until you’re happy with potato & green bean doneness

taste for salt
