Spiced Roasted Cauliflower & Carrots
1/2 large head cauliflower [or 1 small head]
2 large carrots, peeled, sliced 1/2” thick
5-6 garlic cloves, chopped coarsely
1 tsp fennel seed
1 tsp cumin seed
1 tsp ground turmeric
sprinkle of red-pepper flakes
salt and black pepper
olive oil
heat oven to 450 degrees
slice cauliflower lengthwise into ½-inch thick slices [some will crumble and fall apart, that’s okay, use it all
distribute cauliflower, carrots, & garlic on a baking sheet
sprinkle with fennel seed, cumin seed, turmeric, red-pepper flakes, salt, pepper
drizzle generously w/ olive oil
roast for 20 minutes, then flip the larger pieces and stir the smaller bits around, roast another 10 minutes
