Posole

2 Tbsp olive oil

1/2 onion, sliced

1/2 sweet red pepper, sliced

1/2 sweet yellow pepper, sliced

3 large garlic cloves, chopped

1 Serrano pepper, seeded & chopped

1-2 Roma tomatoes, chopped

1 15-oz can white hominy, rinsed & drained

2 cups chicken broth

1 4-oz can green chilis or jalapenos

1 cup cooked chicken, chopped

1-2 chard leaves, chopped

1 tsp chili powder

1/2 tsp cumin

1/2 tsp thyme

1/2 tsp salt


saute onion / sweet peppers in oil in a mid-sized saucepan for 5 min


add garlic / Serrano / tomatoes

cook another 2 min


add everything else

bring to a boil

gently boil for 10 minutes


off heat, cover, & let sit until entirely cool

reheat to serve
