2 Tbsp oil
1 leek, chopped
1 sweet potato, peeled & cut into 1/2” cubes
3 garlic cloves, chopped
1 15-oz can black beans
1 15-oz can tomatoes
1 small can green chilis
1 tangerine, peeled & separated into segments
juice of one lemon
1/2 cup water
1 tsp cumin
1 tsp chili powder
1 tsp salt
ground pepper
1 small can corn
toss everything into a crockpot
cook covered, on high, for 4 hours
add corn
cook until corn is warm
