Sweet Potato Lentil Latkes

1/2 cup red lentils

1 cup water

1/2 medium sweet potato, peeled and grated

1/4 onion, finely chopped

1 clove garlic, minced

1/4 teaspoon cumin

1/4 teaspoon paprika

salt and pepper to taste

1 tablespoons garbanzo flour

olive oil


Cook lentils about 10-12 minutes until the lentils are tender.


Combine the lentils, sweet potato, onion, garlic, cumin, paprika, salt, and pepper. Stir in the flour.


Cook patties in hot oil in skillet for 3-4 minutes on each side until golden and crispy.
