2 Tbsp olive oil
1/3 yellow onion, chopped
1 carrot, sliced
1 stalk celery, sliced
1/3 red bell pepper, chopped
1/2 tsp dried thyme
salt / pepper / gochugaru
2 cloves garlic, chopped
a few green leaves, e.g., Napa cabbage, chopped
2 cups chicken broth
1 cup water
1 can chickpeas, drained & rinsed
2-3 oz spaghetti broken into 2” lengths
1/2 cup frozen peas
3/4 tsp curry powder
saute veg w/ thyme & seasonings until softening
stir in garlic & greens
add liquids / chickpeas & bring to a boil
add spaghetti & simmer for 12 minutes
stir in peas & curry powder
cook one more minute
let sit a while before reheating for eating
