Carrot Cauliflower Soup

1 tablespoon coriander seeds

2 tablespoons extra-virgin olive oil

1 large white onion, peeled and diced

2 large garlic cloves, finely chopped

5 medium carrots (1 pound), peeled and cut into 1/2” slices

1 1/2 teaspoons kosher salt, more as needed

3 tablespoons white miso

1 small (or half of a large) head cauliflower, trimmed and cut into florets

1/2 cup frozen peas

1/2 teaspoon lemon zest

2 tablespoons lemon juice


saute coriander / onion / garlic in oil for 5 minutes until softened

add carrots / salt / miso / 6 cups water & bring to a boil

lower to simmer, cook 5 minutes

add cauliflower, cook another 10 minutes till veg completely tender

puree w/ wand blender

add frozen peas, reheat until peas are hot

add lemon zest / lemon juice
