Vegetable Curry

2 Tbsp olive oil

1/2 tsp cumin seed

1/2 tsp turmeric

1/2 tsp cardamom

1/2 tsp coriander

1/2 tsp garam masala

1/2 leek or onion, chopped

1 can garbanzos, drained & rinsed

3/4 tsp salt

ground pepper

1” fresh ginger, diced

1-2 garlic cloves, diced

2 serrano peppers, seeded & diced

2 carrots, sliced

1/2 sweet red pepper, chopped

5-6 chard stems, sliced

1 can coconut milk

5-6 chard leaves, sliced into thin ribbons


saute spices & leek / onion in oil at medium heat for 3 minutes

add garbanzos / salt / pepper & saute, stirring, for 4 minutes

add remaining vegetables except for chard leaves & saute for 3 minutes


add coconut milk & bring to a boil

lower heat & simmer uncovered for 10 minutes

add chard leaves, simmer uncovered another 15 minutes
