Cherry Tomato Pasta

4 oz pasta

1 Tbsp olive oil

1/4 red onion, chopped

1 scallion, sliced

12 cherry tomatoes, halved

sprinkle of basil

salt / pepper

1 tsp balsamic vinegar

1/4 cup dried cranberries [currants] soaked in hot water

1/2 cup plain yogurt

chopped mozzarella


cook pasta


saute onion in oil for 3 minutes

add scallion / tomatoes / basil / salt / pepper

saute 3-4 minutes more

add vinegar


add cooked veg / cranberries to yogurt

add cooked pasta

stir well w/ more salt / pepper as needed


sprinkle mozzarella chips over each serving
