olive oil
3 cups chopped vegetable (onion, carrot, celery, beans, etc.)
1/4 cup red lentils
1/4 cup brown rice
1 can beans (great northern, navy, garbanzo, etc.)
2 cups broth
coriander, curry powder, ginger, mustard, nutmeg, red pepper flakes
salt, fresh ground pepper
saute veg for 5 minutes in olive oil
add everything else
bring to a boil
lower to simmer
cook until rice is done, about 40 min
