2 Tbsp olive oil
1/2 red onion, cut in thirds, then thin sliced
2 garlic cloves, chopped
3/4 tsp ras el hanout
1/4 tsp ground harissa
1/2 tsp salt
1 bay leaf
1 15-oz can diced tomatoes
1 tsp vegetable bouillon concentrate
1/2 cup water
1 15-oz can garbanzos, rinsed & drained
1 small box baby spinach
1 tsp soy sauce
1 tsp maple syrup or other sweetener
saute onion in olive oil until softening
add garlic / seasonings / tomatoes / bouillon / water
simmer 5 minutes
add garbanzos & simmer 5 more minutes
stir in spinach until all wilted
simmer 10-15 more minutes until tomatoes are breaking down
taste, decide whether to add soy sauce & sweetener
serve over cooked grain
top with a spoonful of plain yogurt
