Leek Celery Potato Soup

2 Tbsp olive oil

the white of 1 leek, halved, then thinly sliced

2 garlic cloves, chopped

1/2 tsp salt

black pepper

3 stalks of celery, thinly sliced on the diagonal

6-8 small yukon potatoes, thinly sliced

2 cups vegetable broth

1 bay leaf

3/4 tsp dried thyme


in a medium saucepan, warm olive oil, then add leek / garlic / salt / pepper

cook slowly, about 10 min, until very soft

add everything else, bring to a boil, simmer covered for 20 minutes


serve with a spoonful of plain yogurt or sour cream
