Carrot & Quinoa Kugel

2 Tbsp olive oil

1/2 medium onion, chopped

1/2 cup quinoa

1 1/4 cup water

1/4 tsp salt

1 lb carrots, cut into thin matchsticks

1/2 cup cottage cheese

3 eggs

salt & pepper


cook onion in oil until softening

add quinoa, cook while stirring 2-3 minutes

add water / salt & boil

add carrots, cover, simmer on low 15-20 min

if any liquid remains, boil it off quickly

lay a cloth over the pot, then the lid, let sit 10 min


preheat oven to 375°

oil a pie pan


mix together cottage cheese / eggs / salt / pepper

add quinoa / carrots

transfer to pie pan

bake 25-30 min until knife pulls out clean
