2 eggs
1 cup milk
1 cup ricotta
1.5 Tbsp flour
salt & pepper
2 Tbsp olive oil
3 sweet peppers (red / yellow / green / orange), chopped small
2 large garlic cloves, chopped
salt & pepper
1 tsp gochujaru if you like it
2/3 cup grated manchego [or whatever kind] cheese
combine eggs, milk, ricotta, flour, & seasonings in a bowl, mix well
saute peppers at medium low heat until they cast off all their moisture
add the garlic halfway through
line a loaf pan with parchment paper
pour cooked peppers / garlic into the loaf pan
pour the egg / milk mixture on top
wiggle a little to get the peppers to move into the custard
scatter grated cheese on top
bake 35 minutes in 375° oven
or until a knife slips thru & out clean
let sit at least 15 minutes before eating
