Pea Soup

2 Tbsp oil

1 onion

2 carrots

2 celery

3 garlic

1 tsp thyme

1 lb dried split green peas

1 lb ham hocks

2 quarts water [or chicken / veg broth]


chop veg into 1/2” pieces

dice or slice garlic

saute veg for 5 min

add the rest

bring to a boil

reduce to simmer

simmer partially covered for 60-90 min until peas are soft

remove hocks

cut meat from bone & return it to the soup
