Vegetable Clafoutis

olive oil

1 leek, halved & sliced

salt / pepper

4 large mushrooms, halved & sliced

generous sprinkle of nutmeg

1/2 cup fresh or frozen green peas

2 garlic cloves, diced

4-5 oz fresh spinach


3/4 cup ricotta

3/4 cup greek yogurt

3 eggs

3/4 cup cooked rice

salt / pepper / dill / paprika


a thin layer of panko at the bottom of a pie pan

1/3 cup grana padano, grated


whisk together ricotta / yogurt / eggs / rice / seasonings


saute salted & peppered leek slowly in olive oil until softened

add mushrooms & nutmeg, saute 5 min until barely browning

stir in peas & garlic

add spinach & stir until fully wilted


gently pour vegetables into pie pan without disturbing panko

top with cheese mixture

sprinkle generously with grana padano


bake 30 minutes @ 375° or until a knife comes out clean
