2 Tbsp olive oil
2 1/2 lb turkey breast
thyme, mustard, etc.
salt, pepper
2 Tbsp olive oil
2 stalk celery, sliced
3 carrots, chopped
3 cloves garlic, chopped
2 cups chicken broth
generously season the turkey breast
brown both sides, but mostly the skin side in olive oil in a deep hot pan
sweat vegetables in olive oil for 3 minutes
set turkey breast on top, skin-side up
add broth
bring to a boil
cover & lower to a simmer
cook for 40 minutes or until an instant thermometer in the meat reads 165°
off heat, let sit covered for 10 minutes
lift turkey breast onto a place & let it cool
save veg & broth for soup
